Cake Batter Waffles

It's day 2 and I'm still doing this:

See the prompts here.

Hey, let's face it, two days in a row is good for me these days.

Day 2, Thursday: Educate us on something you know alot about or are good at

Hmmm, this is a toughie, actually. Honestly, I'm good at so very much. :) I kid.

I think one of the things I know alot (ish) about and am good (ish) at is cooking and baking. I love, love to make breakfast. I tried this recently and will DEFINITELY be making waffles this way again..

Recipe adapted from here, but obviously found on Pinterest

It's basically a semi-home made waffle recipe using cake mix as the base. I love this idea because the waffles come out from-scratch like and you can use any flavor cake mix! Red velvet, chocolate, funfetti, anything! I made this Butter pecan version for my dad and it was a hit!

Ingredients:

1 1/2 cups butter pecan cake mix
1 cup flour
1 tsp baking powder
pinch of salt
1 egg
2 tablespoons oil
1 1/3 cup water
Banana nuggets (just chopped up a bannana and threw it in the batter)

Directions:

  1. Stir together the cake mix, flour, baking powder, and salt.
  2. Gradually whisk in the egg, oil, and water until just mixed. A few clumps are fine.
  3. Pour 1/4-1/3 cup batter into waffle maker and follow the machine's directions.

Super easy and mega delish. Try it!

  1. This sounds great...minus banana, but I personally hate bananas. Love breakfast food :)

  2. So waffles are one of my most favorite foods but I had never thought about using cake mix...I wonder if brownie mix would work? This could get very dangerous...
