Recipe Brain Dump

Happy Tuesday! Apologies for the crappy photography, but I want to share some recipes that I've tried out lately and am ob-SESSED with...

Last night, I made this meal for a friend's birthday:


Garlic Crusted Pork Tenderloin. Recipe here. I love pork, but forget to make it. The meal was for a man, so I figure why not meat it up? Now, This recipe was tasty and really easy, but mine disn't come out "crusted" per se, rather more "covered." Maybe grilling v. oven roasting would help.

Roasted Brussels sprouts. Original recipe here. I've made this four or five times lately and am striving to perfect it. Brussels sprouts are just so hip right now it seems. Super easy: olive oil, balsamic vinegar, S&P and pancetta (optional, especially if you aren't a fat kid like me).

Go-to Salad. My own recipe-ish. Baby spinach, strawberries, pecans, red onion, red pepper, goat cheese crumbles and this dressing. Love it. Add chicken to make it a complete meal.

Couscous. HEB brand out of a box. Easy, healthy-ish. Didn't have the band with for another home-made component. #sandralee

All in all, I'm really proud of the meal. I think I'm close to perfecting the Brussels sprouts. Its hard to get them crispy without burning, but I'm getting there. 

And, I got a couple of inquiries about the Super Bowl recipes, so here they are. Brace yourselves. Nothing remotely skinny or healthy is happening. Believe me, I just got off of the spin bike and am still sweating out bleu cheese.


Buffalo Chicken Dip. Recipe here. I originally got this idea from a sweet cousin who brought it to our family Christmas and can't get enough. The Ginger specifically requested it after I made it for the National Championship game. I add extra bleu cheese crumbles. Duh.

Bacon-Wrapped Cheese tots. Recipe here. These were a home run. People were eating them like they were damn M&Ms...several at a time. That's a good thing, but not if you put them together for like an hour before. Note to self: pre make and plan to spend a lot of time. Tasty.

  1. That pork does look good! I always forget to make pork too! I think half the reason is that I get annoyed that they sell 3 to a package...such an odd number. Why not 2 or 4?

  4. That salad looks gorgeous, and I'm intrigued by the Brussels sprouts recipe, they're a food that I always feel that I should eat but never really enjoy that much. Anything that makes them taste better is definitely a winner in my book! Love your blog by the way, am just popping over from Life of Meg and I think I'll definitely be following you in future!! :-)
