Super Easy Chocolate Chewy Cookies

Happy Monday gang! I've had a super-duper weekend. Friday night I recovered after the Royal Wedding, Saturday night I went with friends to see Arcade Fire (it was SO, SO good) and yesterday I bopped around town, exploring new areas of Dallas. It was fabulous. It was my first weekend in a long time to just relax. And it was marvelous.

I made a delicious new treat for the Arcade Fire pre-party that I'm dying to share. A lady in my office makes these cookies all the time...hers are better, but I'm still happy with the turnout. There are only 3 ingredients!

1. Gather your 3 ingredients

The only thing you use is a tub of cool whip, box of cake mix and a single egg. That's it! You can even make these same treats with other types of cake mix -- vanilla, lemon, strawberry, whatever!
2. Mix, roll into balls and roll in powdered sugar

 Mix together your ingredients, roll the "batter" into balls and roll the balls in powdered sugar. No photos of this mixing step could really be snapped, it's SUPER, super messy, but delicious!

3. Bake

 Pop these little babies in the oven at 350 degrees for 10-12 minutes. They come out of the oven super gooey, but once they firm up a bit, they're a light, but chewy treat. 

I'm going into full diet lockdown mode starting tomorrow...so I had to get the cookies off the brain. I love, love this recipe. The cookies are DELICIOUS and so easy. Try it!
