Paula Deen Lite...really

Happy Monday afternoon!

I have another to-die-for recipe to share! Last night, just for funsies, I made one of my favorite Paula Deen delights, but with a healthy twist!

The recipe is Paula's Blueberry Tart, but instead of sugary canned pie filling, I used fresh berries coated in Splenda! Find her original awesomeness here.

Quick steps:

1. Cut up your fruit and douse in Splenda. 

I used Strawberries, blueberries and raspberries, but anything would probably work.

3. Make your pastry crust. 

3 ingredients, super easy. Just press the pecans on top.

4. Slather the crust in the creamy filling and top with fruit.

The filling is whipped cream mixed with sweetened cream cheese. I used low-fat everything. You could probably even skip the cream cheese and make it double whipped cream. Honestly, that's not something I'm willing to sacrifice. This is Paula Deen, afterall. There's no such thing as too many berries. There really isn't.


5.  Bring to your co-workers and step back.


I love this one and highly recommend as a cool, springy/summery treat.

Lets get real for a sec: Are you getting sick of the food and cooking talk? Are you over it? Or, do you love it? Lately I'm on a major cooking kick and just love to share with friends. If you're not into it, I won't take offense.  I know there's been a lot lately, but it's sort of just what I'm in to right now. We can get back to gossip girl and cuddly baby animals, if that's what the people want. I aim to please. I'm considering doing a recipe sharing link-up every week. Would you participate?     I plan to make that awesome phyllo/chicken/feta recipe that you posted last week for this week's date night :)

    And this tart would be perfect for Easter - I love the light versions!
